Cold brew grind setting for the Niche Duo

49–55

That is where to start with a light roast. It should come out looking like coarse sea salt. Medium roasts go to 52–58 and dark roasts to 55–60.

Niche Duo, set for a light roast

The setting, by roast

Lighter roasts are harder to pull flavor out of, so they grind a little finer and steep longer. Darker roasts go the other way. The dial runs from 0 to 60.

Where the number comes from

The maker points to 45–60 for cold brew. People who own one report 50–60. Our starting point is 55 for a medium roast, and it moves with the roast.

If you changed the burrs

Different burrs cut differently at the same number. Here is where each set starts.

Burr setLightMediumDark
83mm Filter Burr Set (blue)49–5552–5855–60
83mm Espresso Burr Set (black)Ships installed by default and is used for espresso only; per Niche/forum reports the espresso burr's touch (zero) point reads about 15 lower on the same dial than the filter burr's, so it isn't the burr you'd use for cold brew -- swap to the Filter burr set first.34–4037–4340–46

How to use it

  1. Set it. Set the dial to 49–55. That is the light roast setting. Use the table above for anything darker.
  2. Grind and look. You want pieces about the size of coarse sea salt.
  3. Steep. Give it 18–22 hours in the fridge, or 12–14 on the counter.
  4. Taste and adjust. Too bitter? Go coarser next time. Too sour? Go finer. Move about 6 at a time.

Let the app keep track.
