This is the recipe Hario publishes for this brewer, and it is what Cold Brew Studio opens with when you pick it. It makes about 4¼ cups, best straight over ice.

How the maker does it

Put 80g of freshly ground, dark-roasted coffee into the mesh strainer (Hario recommends medium-fine grounds: coarse grind reduces extraction efficiency and gives a weak brew, while fine grind passes through the mesh and makes the coffee grainy). Set the strainer in the pot, then slowly pour in small amounts of water so all grounds are evenly wetted, filling to the band mark on the handle — approx. 1150ml (8 cups) total. Gently stir with a spoon, fit the lid, and refrigerate; extraction takes about 8 hours (adjust to taste on repeat brews). Remove the strainer when done — leaving it in makes the coffee bitter. Note: finished brewed volume differs from water added because the grounds absorb some water during brewing.

If your beans are darker

Darker roasts give up their flavor faster, so they brew at a slightly wider ratio and steep for less time.

Good to know

Hario's fine mesh strainer basket wants a medium-fine grind rather than the coarse grind typical of immersion cold brew — coarse under-extracts (thin/weak brew) while fine grounds leak through the mesh into the cup. Steep time is also much shorter than most immersion brewers (about 8h vs the usual 12-24h). Fill water to about 1150ml even though the pot is named/sized for 1000ml of finished coffee, since the grounds soak up roughly 150ml during the brew.

This brewer takes about 99 g of coffee at most. Stronger recipes can’t add more grounds, so they use less water instead. That is why every strength comes in under the full 1,150 mL.
